I&#039;m not sure of a substitute for the coffee -- it&#039;s what makes the rub so unique.  We don&#039;t usually drink ground coffee either so I buy small, pre-ground bags (the kind that make only one pot of coffee) and use it only for the rub.  I have tried the rub mix with cinnamon and a tiny bit of cocoa powder.  That makes a nice rub too.  But, the coffee is so worth it in this recipe.
